Crispy Fried Chicken

The Making of Crispy Fried Chicken

C rispy fried chicken is a classic comfort food with a crunchy outer coating and juicy meat inside. This recipe gives you flavorful and crispy chicken at home.
Start by cleaning and washing chicken pieces thoroughly. Pat them dry using a kitchen towel. Make small cuts on the chicken so the marinade goes inside.

In a large bowl, add curd, ginger-garlic paste, red chilli powder, black pepper, paprika or Kashmiri chilli powder, salt, lemon juice, and a little soy sauce if desired. Mix well and add the chicken pieces. Coat them evenly and marinate for at least 1 hour. Overnight marination gives the best results.

For the coating, take another bowl and mix all-purpose flour, cornflour, salt, black pepper, garlic powder, and chilli powder. This dry mixture will make the chicken crispy.

Heat oil in a deep pan on medium heat. While the oil heats, take a marinated chicken piece, roll it in the flour mixture, dip it briefly in water, and coat again with flour. This double coating gives extra crunch.

Carefully slide the chicken pieces into the hot oil. Do not overcrowd the pan. Fry on medium heat so the chicken cooks from inside without burning outside. Turn occasionally.

Fry until the chicken turns golden brown and crispy. Remove and place on kitchen paper to absorb excess oil.

Serve hot with tomato ketchup, mayonnaise, or garlic dip. Crispy fried chicken works great as a snack, starter, or party dish.
