ixed vegetable curry is a healthy and comforting dish made with seasonal vegetables and aromatic spices. It goes well with roti, naan, or rice.
Start by washing and chopping vegetables like potato, carrot, beans, peas, cauliflower, and capsicum. Keep them ready.
Heat oil in a pan and add cumin seeds. Once they crackle, add chopped onions and sauté until golden brown. Add ginger-garlic paste and cook until raw smell disappears.
Add chopped tomatoes, turmeric, red chilli powder, coriander powder, and salt. Cook until the oil separates from the masala.
Now add all the vegetables and mix well so they are coated with spices. Add a little water, cover the pan, and let the vegetables cook on medium heat.
Once vegetables are soft, add garam masala and fresh coriander leaves. Simmer for a few minutes to blend flavors.
Serve hot with chapati, paratha, or steamed rice. This dish is nutritious, filling, and suitable for everyday meals.
